Ingredients

1 1⁄2 kg yellow peaches
300 ml water
juice and peel of 2 lemons
1 kg sugar

Preparation

1. Cover the peaches with boiling water, leave for 1 minute, then remove skins. Quarter the fruit and discard the stones. Put the peach flesh in a pan with the water, lemon juice and peel. Simmer gently until reduced to a pulp. Discard the lemon peel.

2. Add sugar and stir until dissolved, then boil rapidly until setting point is reached. Variation: Simmer 12 peach kernels for 2 minutes. Peel, then add to the pan with the peach fl esh and simmer.
