For me, pesto is one of the flavours I most associate with summer and I make batches and batches as soon as the basil is cheap.
 
My three favourite ways to use pesto are:
 
  1. I drop a few teaspoons on the middle of the omelette before flipping over and turning out onto a plate. It makes a delicious and ooze-y filling which turns a simple food into something special.
     
  2. Instead of covering a home-made pizza with cheese, I add dobs of pesto as it comes out the oven. I find the paste adds so much flavour and richness you don't need as much cheese.
     
  3. For a gorgeous summer breakfast, spread pesto onto pieces of wholegrain toast and top with slices of fresh, ripe tomatoes.

Drizzle pesto over grilled chicken when taking it out of the oven. It adds a great taste and prevents the chicken drying out prior to dishing.
