Watermelon is one of my favourite summer fruits. Where I live they're just coming into season, and while still a bit expensive, they're delicious and sweet.
 


If you're buying a whole watermelon, store it out of the fridge, in a cool, dark place. Watermelon contains the antioxidant lycopene and research show the lycopene content actually increases, when the fruit is not chilled.  Although it will only keep like this for a few days.

Once cut, then you'll need to put your watermelon in the fridge. Cover the cut edge with a piece of baking paper and store in the fridge for 3 - 4 days.
