 Set children off to a good start by making appealing vegetable-packed meals a way of life. Canned baked beans are always popular, and a good partner for vegetables: serve them in baked potatoes or use them as a base for frozen mixed vegetables. Here are some more ideas.
 
Extend the meat mixture for burgers by adding lots of grated carrot and chopped celery.
 
Add brightly coloured vegetables, such as capsicums, tomato, peas and corn, to frozen pizza toppings.
 
Add extra diced carrot, capsicums and chopped tomatoes to spaghetti bolognese.
 
Include sliced or grated vegetables in all sandwiches. Cut up sausages or burger patties into bite-sized pieces and thread onto skewers with chunks of capsicum, mushrooms, baby corn, zucchini and other vegetables. Grill or cook on the barbecue.
 
Add peas, diced carrot, shredded cabbage, broccoli florets and other vegetables to the minced meat mixture for a cottage or shepherd’s pie.
 
Cook swede, carrots and parsnips with potatoes for mashing – you’ll be amazed at the flavour they add.
