Baked ricotta French toast with tomato salsa

Ingredients

4 eggs
1⁄4 c ricotta cheese
1⁄2 t paprika
8 sli wholegrain bread
For the salsa
5 tomatoes, finely diced
1⁄2 avocado, peeled and diced
1⁄2 bn coriander, roughly chopped
juice of 1/2 lemon
pinch of paprika

Preparation

INSTRUCTIONS

1. Preheat oven to 200°C. Lightly brush a baking tray with olive oil and place in the oven for 5 minutes to warm up.

2. Put eggs, ricotta and paprika into a large shallow bowl and beat together. The eggs and ricotta should be well combined, but it doesn’t matter if there are small lumps in the mixture. Add the bread, moving each piece around until it’s soaked with egg and ricotta.

3. Place the slices of bread onto the preheated baking tray and place in the oven. Cook for 7-8 minutes on the first side, until golden brown. Then turn the bread over and cook the other side for another 7-8 minutes, until it’s also golden brown and slightly puffed.

4. While the bread is cooking, make the salsa. Put tomatoes, avocado and coriander into a bowl. Pour over the lemon juice and toss to combine.

5. Serve the French toast with the fresh tomato salsa, sprinkled with a pinch of paprika.

TIP: French toast works best when made with slightly stale bread, so it’s a good way of using up an old loaf.
