The Everyday KitchenFood advice for a busy life
I haven't made any of these yet. Instead, they're recipes I've spotted recently, while wandering around the Internet. Each is an interesting, different vegetarian dish and they all provide a balance of nutrients, while also, in my opinion, looking utterly delicious.
1. Savoury Bread Pudding with Swiss Chard (aka Silverbeet)
I love this idea from Martha Rose Shulman, on the New York Times website. It's a great way of using up stale bread, while making a hearty and filling dinner. Serve with a green salad on the side.
2. Curried Courgette Fritters
More and more I'm loving the Mummy I Can Cook blog. Recently Shu Han posted these gorgeous looking zucchini fritters. I'd have these with some brown rice and a dollop of yoghurt.
3. Tomato Egg Curry
I haven't made this Sri Lankan egg curry yet from The Mindful Foodie, however I think it looks really good. I love the use of spices like black mustard seeds, curry leaves, cumin, coriander, together with a wedge of fresh ginger. Serve with some basmati rice and again a green salad would be a good addition.
4. Caramelised Onion & Cauliflower Tart
It was Cindy and Michael from Where's the Beef who first pointed me to this wonderful looking vegan tart from Easy as Vegan Pie. Cindy and Michael replaced the Cheezly with a drizzle of truffle oil, which I think is an excellent decision. I'd have this with a pile of steamed vegetables and maybe a small baked potato.
5. Hot Chilli Pepper Tofu
While not everyone loves the flavour and texture of tofu, I do. And I think this fiery, sweet and tangy looking recipe from Baba Ganuj would be quite wonderful. There are a few ingredients, however it's easy to put together. And with the combination of garlic, ginger, chilli, sesame seeds and green shallots, how can you go wrong?
